When I told a friend that we were planning a “favourites” series (Thai, Moroccan, Indian, Chinese, Spanish…), over the fall and winter, he asked: “Your favourites or popular favourites?”

A little of both. Of course we couldn’t leave out Pad Thai in a Thai class – but neither could we pass over Steamed Fish with Fermented Black Beans in a Chinese Favourites class just because few non-Chinese have experienced it. So, these classes will feature our take on popular favourites and dishes that deserve to be: recipes that capture the essence of a cuisine – and are easy enough to prepare for family dinners and stylish enough impress guests. We start with Thai, Indian and Chinese classes this fall and follow up with Moroccan, Japanese and Spanish classes over the course of the winter. – Don
