
Asafoetida (Hing)
Asafoetida (sometimes spelled asafoetida or Hing), is much maligned, starting with its name, which in Portuguese means "wings of stink". It is actually a wonderful and versatile seasoning from India, which, when cooked, takes on a delicate flavour and fragrance reminiscent of garlic and white truffle. It is a digestive and anti-flatulent, and should be added to vegetable dishes, particularly legumes.
