Saffron threads are the vivid red stigmas of the saffron crocus. The cost of this incredibly expensive spice is due in large part to the labour-intensive process of hand-harvesting it, and in part to the fact that the plant is sterile and must be hand propagated through division. From Bronze Age Greece, cultivation has spread throughout Europe, the Middle East, Central and South Asia. Don't let anyone tell you that saffron is all about the glorious golden colour it imparts, it has an incomparable, intense flavour and fragrance that would justify its expense even it was colourless. Spanish saffron is amongst the best in the world.
