Caraway (carum carvi) is has a warm, earthy, nutty flavour and fragrance that incorporates notes of fennel, anise, cumin, citrus, dried mint and eucalyptus. It is native to and used throughout Europe (rye bread, cheeses, sausages), the Middle East and Africa (harissa, ras el hanout), Asia and India (garam masala, tandoori spice, Thai matsaman curry). Medicinally, it is an aid to digestion; folklorically, it is said to keep lovers from straying. Goes well with apples, cabbage and pork.
