
Achiote Paste - Red
This vivid red annatto seed-based recado (a spice blend in the form of a dense paste) is also called recado rojo. It is an essential Yucatan flavour, used in marinades and sauces for meat, poultry and fish. Cut off a chunk and dissolve in citrus juice for a marinade; for a sauce, dilute the marinade with stock and/or water.
