
Adobo Pibil
This is the annatto seed based seasoning paste, to which you add only acidic citrus juice, for the justly famous Mayan dish, cochinita pibil: Pit-roasted whole suckling pig (cochinita means baby pig and pibil means buried). But you don't need to use a whole pig; pork shoulder or loin, or our favourite, ribs, are great options. Or use another meat (lamb is great) if you don't want pork.
