
Cha Soba (Green Tea Buckwheat Noodle)
Cha soba noodles are traditionally served cold with a simple dipping sauce, but they can also be used non-traditionally say hot and lightly-dressed as a bed for pan-seared scallops. They are expensive, compared to plain soba noodles in addition to the macha (green tea powder), only the paler, inner portion of the buckwheat seeds can be used in their manufacture.
