Dukkah in Arabic means "pound" or "crushed", referring to the chopped nuts and ground toasted spices in this wonderful traditional Egyptian spice blend. There are many Dukkah recipes based on concoctions of different nuts and spices. To make ours, we combine the freshest spices with chopped pistachios and almonds, leaving out the salt, so that you can add it to suit your taste. Use to crust lamb, chicken or fish. Sprinkle on yogurt or fresh cheese. Bake it into breads or pastries. Mix with goat cheese or feta to stuff chicken breasts or roasted peppers. Or simply dip bread into olive oil, then Dukkah to enjoy it as it is eaten traditionally.
