Juniper Berries bring a fresh, resinous, woodsy scent and flavour to meat, poultry and fish dishes. They are particularly good with game (venison, buffalo, etc.), fatty meat and poultry (pork, duck, etc.) and with oily fish, where their sharp, piney freshness cuts through any gaminess or heaviness. Juniper blends well with other pungent aromatics such as garlic, onion, allspice, oregano, thyme and bay leaves. Leave whole, or crush or grind just before use.
