This is the most well known of the many moles in Mexican cooking (the one with a hint of chocolate). While homemade mole is definitely best, it is also a notoriously time-consuming enterprise. This mole is very economical (a big spoonful makes several cups of sauce) and quite serviceable for a quick weeknight dinner.
