Roasted Chili In Oil is a delicious and versatile condiment. It is made from nam prik pao, or roasted chili in oil, which has been blended with ingredients like garlic, shallots, shrimp paste, fish sauce and a range of herbs and spices.

If you were to limit your Thai pantry to a single thing, this is probably it. Why do the stir fries in a Thai restaurant taste, well, Thai? Nam Prik Pow. What do Thais put on their toast? Nam Prik Pow. The name is usually translated as Roasted Chile Paste or Chile Jam (and, badly, on this jar as "Chile Paste in Soya Bean Oil"), but it is pretty hard to define in terms of Western ingredients. Thai food in a jar? This (slightly) hot, sour, salty, sweet condiment can be used as a table sauce and a cooking ingredient, in straight-up Thai cooking, or on a burger, or used to flavour mayonnaise... Delicious! (Contains fish sauce and dried shrimp.)
