New Mexican Chile Powder, Red
Fruity and fragrant and medium hot, this chili powder is used throughout northern Latin America and the southwestern U.S. Ideal for chili con carne and other Norteña classics or to add a soft warmth to soups, sauces, stews, etc. Do not confuse this with commercial Chili Powder which is a mixture of ground chili, oregano, cumin, salt and flavour enhancer. To achieve a far more aromatic version of this classic Tex-Mex mix, combine 2Tbsps of New Mexican Chili Powder, 1 Tbsp of freshly roasted and ground cumin seeds and 2 tsps of Mexican Oregano (rubbed briskly between the palms).
