Nora Chiles, Whole
Spanish smoked paprika is made from nora chiles, which are called pimiento choricero. They are always used dried and are essential to authentic Spanish and Basque cooking. Nora chiles impart an earthy, mild, fruity flavour and fragrance and a rich red colour to soups, stews, sauce (romesco) and rice dishes (paella, arroz a banda), and notably, sausages. They particularly complement seafood (bacalao a la Vizcaína), as well as poultry. Try in mashed potatoes, crab cakes or octopus stew.
