Piquin (also spelled pequin) are the cultivated form of tepin, or chiltepin, the wild chiles from which all cultivated forms are derived, primarily through the astonishingly sophisticated plant breeding techniques of the Mayas and other Native Americans. Tiny piquins, like their wild cousins, are very, very hot, with a sharp, bright flavour. Use in soups, sauces and stews providing that you like your soups, sauces and stews muy picanté.  

Chile piquin is one of the most widely used chiles among chefs around the world. It has a highly distinctive, smoky flavor that adds depth to any dish. This chile is also known as chilpaya and chiltepin.
