
Shichimi Togarashi, House Foods
Shichimi, which means seven flavours in Japanese, has chile flakes (ichimi) as its main ingredient, adding sancho, citrus zest, black and white sesame seeds, nori and usually ginger, but sometimes shiso, to make up the seven. Some or all of these ingredients are also added to sesame oil to make Layu or Rayu, meaning spicy oil in Mandarin, not Japanese. Ichimi, shichimi, and rayu/layu are most often used sprinkled atop Japanese noodle dishes.
