
Yuzu Kosho, Green
Yuzu kosho is a condiment made from green chilis, salt and the zest and juice of the prized Japanese yuzu citrus. This simple mixture is then left to ferment and intensify. Its distinctive combination of acidity, umami and heat will enliven just about anything. Traditionally used with sashimi, or to add a kick to miso soup, it also works well as an addition to marinades, as a meat rub, or even to add a spicy, salty depth to desserts.
