Sage (Salvia officinalis) has been used since ancient times as a culinary and medicinal herb. As its Latin name suggests salvia means roughly salvation it has been credited with curing almost every ailment imaginable from snakebite to the plague. Sage is also amongst the most widely used culinary herbs. Its piney, peppery, citrusy, earthy intensity is great with meat and poultry, carbohydrates (bread stuffing, potatoes, mac and cheese) and rich fatty foods (goose, duck, pork belly, sausages) in general.
